Trouble editing an Excel object in Word

I've got an Excel object inserted into a Word document. All the help information tells me I should be able to double click the object and edit it within Word. However, this isn't happening.

When I double click on the Excel object it's trying to open the excel sheet but it's opening so small it can't be seen. I'm trying to set this up for a non-tech manager so if it worked as it should it would be ideal.

Any suggestions on why this might be happening and how to fix it?

Are you able to adjust the zoom setting in excel?

Yes, I can adjust the zoom setting in Excel. Just hoping not to have to use Excel at all but edit the object within Word.
