Any suggestions on what to charge for this? I don't want to charge myself out of a gig but don't want to short change myself either.

How many people are going to be in these classes?
For remote training via instructional videos companies charge somewhere around £200 per person for (the first link I found from Google) 18 hours of videos. For on site classroom training with an actual real person you've got to consider the added value of speaking to a real expert rather than watching a video....and the bulk nature of training delivery. So if the end client wants a dozen people trained up it'd cost him 12 x £200 and the end result would be maybe 6 people picked up something useful from the vidoes. If you charge the end client £350 per day for a week you're still saving him money AND giving waaaaaaay better knowledge transfer than youtube would.
Also depends on the size of the organisation. The larger the company the less they'll notice the training budget......so go fleece em for as much as you can get.
