Basic question about how to use fields with a template?

Sorry for what is probably a very dumb question. I'm not very experienced with Word. I have downloaded a template off of the Office website. The first page looks like this:

So far, I understand that [Organization Name], [Date] and [Project Name] are fields that need to be replaced with actual text. Do I just overwrite these? That seems like it's not the right thing to do. I'm just not sure how to make it so that the actual text shows up instead. I'm using Microsoft Word 2010. Thanks.

Depends on the template. Are these fields or just text? An image doesn't tell us anything. Can you attach the file?

The paper clip icon does not work for attachments. Instead, under the text box where you type your reply click the Go Advanced button. On the next screen scroll down and click on Manage Attachments, which will show a pop-up window to Select and Upload a file. Then close the window.

    This is the template:

As far as I can tell they are fields.

They are fields but I have not used this particular type of field. As near as I can figure they are intended for you to click it, then it will prompt you so you can type in your organization, date, and project name. I could not get it to work. You may as well just type over them with that information. I don't see the value in using fields for that.

They're just MACROBUTTON fields. These fields are designed to be double-clicked to run a macro. However, when they're pointed to a non-existent macro (in this case, one named DoFieldClick), you can simply click on them and overtype the contents. With this particular template, then, all the MACROBUTTON fields do is to function as placeholders to indicate where you might type something.
