When I change width of a column, the size of the table remains the same - Word simply redistributes space. However, I need it to change the width of the table too, so that other columns stay the same.

Make sure ruler is visible (View cart on ribbon) - it's available only in Print Layout, Web Layout and Draft views
Now change widths of columns by dragging right column width limit on a ruler (looks like dark gray rectangle). Cursor during this operation is shaped like <=>.
The behaviour you observed happens when you adjust width of column by placing a cursor over a gridline in a table by <-||-> shaped cursor.

So I think, that takes care of your original question. Would be nice if you select Thread Tools from the menu link above and mark this thread as SOLVED.
