Fill out a form on SharePoint and have the data imported to an external Excel file

I'm trying to create a form where I can host on SharePoint, its filled out and submitted, once submitted then sent to an excel sheet, then indexed and sent to a different sheet in that excel file. Is this possible? I just need guidance on if it can be done and a good starting point. Thanks for any assistance!

Oh and I forgot that the excel file is stored on a separate drive and not on SharePoint. I'm not even sure if its possible.

I don't think SharePoint has the native ability to interface to an Excel file as you are describing. I think you might be able to pull this off with a third product, like Microsoft Flow (which may be included in your version of SharePoint), but it's a bigger problem that just an Excel problem.
