Dynamic Chart Data not Updating

I would like a chart that displays January-December of only the past 3 years worth of data.

I defined names to create the Series name and Range- using OFFSET(...COUNTA...) for each year individually. It kept telling me that my value was invalid when I tried to put all three years together and select one 3x12 range using the OFFSET...

This is working ok until I add a year. It only updates once I go back to the name manager and click on the formula under "Refers To."

Yes, calculate is set to automatic in my options.

Also, when I reopen the sheet, it adds a "year" series to my table acting like a fourth year relabeling my months to numbers 1-12. I assume this is because I am using the top row to bring in the labels; however, this does not happen consistently.
