Pivot multiple tables located on multiple sheets

Hi, I want to be able to pivot multiple tables which are on different sheets into 1 pivot table. The tables are have identical layouts, but I cannot use the consolidate feature because I have several fields that are not numerical. I am trying to use the pivottable and pivot chart wizard but rather than getting the list of pivot fields I would expect, I am getting Row, Column, Value and Page. Is there a way to pivot multiple tables and have it work like a normal pivot table? There will actually end up to be about 15 tables, but this is just an example. Thanks!

    Thank you for your response.
So, if I went this route,I'd need a macro I could run that could clear all current data, find each sheet with the name "dept" in it (new sheets can be added at any time) and copy it to the table total. The data on the sheets will constantly be changing, so I'd need a way to easily and quickly refresh. Thoughts?

My solution is based on Power Query - I would suggest a solution like above with the difference that dne would be downloaded from the file. Each additional sheet will load automatically. The pivot table will therefore be in a separate file. I'm frightened by the spelling style, but I support Google's witch
