I have an existing workbook that I originally built using copy/pasted tables into the data model to create my power pivots. When I originally built this, I was not able to directly connect to my SQL, now I can. Is there a way to convert the tables to SQL data sources or do I need to rebuild/reconnect everything to the queries?

Ok, changing source of table will likely break your data model.
Best approach is to copy DAX measures into some text file. Connect to SQL via Get & Transform (PQ), and load data to the model. Then add back in any measures/calculated columns as needed.
Don't try and connect to SQL directly from data model (this can cause a lot of headache down the line).
