Pivot Table automatic break down a Date/Time Field

Hi everyone. I have searched on this problem but couldn't find the right information so hopefully someone here can answer or point me in the right direction.

I am doing some pivot table analysis of log files where one column of cells includes a "TimeCreated" field with both date and time combined - eg: "7/08/2021 10:23" (Australian format using dd/MM/yyyy)
When I am dragging the fields and setting up the pivot, I can drag the "TimeCreated" field into the "Rows" section and it will automatically break it down to "Days", "Hours", "Minutes"
However if the source data is spread across two months, it will only break it down to "Months" and not the days, hours, or minutes

    My questions are:
    - How can I get it to break down to Months, Days, Hours, Minutes when spread across more than one month ?
    - Are there configurations settings for this action or behaviour ?
    - What do you call it when it breaks them down ? I don't think it is Grouping/Ungrouping. This will help for more Google searching if nobody knows the answer specifically.

I am aware I can expand out that field into different columns or even use some other formulas or filtering etc, but the aim is to reduce the work required in excel and use the default generated log files - and because Excel is already doing part of it but I cannot find the settings to manage it - so I am particularly interested in this function/action/bahviour if anyone has any information about it, .... or what words to use for more google searching (eg: Group/Ungroup doesn't bring back the right results)

    Thanks for your help

It is grouping, and you should be able to right click one of the values in the pivot table, choose Group and amend the grouping as necessary.
