Dynamic Pivot Table Help

I have attached an excel file I'm working on. In this file, I have a combo box form control that allows you to select Day or Night and this changes the hours from starting at 6AM to starting at 6PM. I will eventually have data brought into the table corresponding to these times that will update based on whether Day or Night is selected. The parameters are at the top of the table, along with a North and South Comparison. I will have two more data sets exactly like this but with different data, and I'm looking for a way to make a pivot table that will let me chart these parameters using a scatterplot and allow me to select whether it is data set 1,2, or 3 and if it is North or South. I have been messing with it and cannot seem to get anywhere so any help would be appreciated. Thanks

All of the data that I included in my attached file is one set of data. There's 21 or so different parameters for each data set so I can't just put them all in one column since I need the time values for each parameter as well.
