Today() gives me today's date in a cell but I want the cell to remain at that date tomorrow.
How can I do that?
It's like a replacement for the user having to enter the date :-)

While holding down the control key, select the semi-colon key
CTL + ; will give you today's date hard coded.

Put =TODAY() in a cell of your choice and name it something appropriate. In the cell you want the user to enter today's date use a data validation list with the named range as the source. They can then select from the dropdown box rather than enter the date and it's a value so it won't change tomorrow.
Alternatively put =TODAY() in the cell you want for today's date and write some VBA code to paste the value into that cell on exit.
