COUNTIF Function using time to extract call stats per hour

Hello,

I'm trying to produce a simple log of when our calls come in to see if we can better resource office phones or change opening times.

I have extracted call data to excel and managed to convert the date into day of the week to then count this so I know volumes of calls per day of the week.

I now need to extract the time of the call in a series of columns by hour using a formula that will tell me how many calls were made every monday between time point A to B then B to C and so on e.g. 8am to 8.59am, 9am to 9.59am and so on.

I've attached an example of how I'm building the spreadsheet.

This would be repeated for every day Monday through Sunday.
