counting non blank cells in a date range

I make entries of orders processed in date order, from oldest to latest. I want to count the number of jobs processed, both by the total on any date AND by total regardless of date. If I use 2 cells to get those answers, what formulas do I use in each cell?

Use the subtotal feature by date with grand totals.

That will work but I need a formula in 2 cells so I don't have to keep going back and doing the subtotals and removing previous results. That way, I can see the subtotals at any time and continue to input data and see the subtotals update.
