I an trying to convert a Saudi Date 25/04/1440 to the Gregorian format 01/01/2019, I have managed to convert from 01/01/2019 to the 25/04/2019 but cannot figure out the reverse, can anyone assist?

I am probably missing something, however it seems to me that converting January 1st to April 25th involves adding 114 days, so reversing the process would involve subtracting 114 days.
Assuming the date 25/4/2019 is in cell A2 use: =DATE(YEAR(A2),MONTH(A2),DAY(A2)-114)

You can format Gregorian dates to appear as Hijri dates:
A B 1 1 Jan 2019 2 24/04/1440A2: =A1 3Format of A2: B2dd/mm/yyyy
