Assuming what you want to replace is the 7-digit number after the word "PIN", give this formula a try (change "ReplacementValue" to whatever it is you want to replace the 7-digit number with)...
=REPLACE(A3,FIND("PIN",A3)+4,7,"ReplacementValue")
