Text before and after multiple characters

Afternoon fellas,

I've been brain cramping around this all morning fixing one scenario only to mess up the 2nd and 3rd scenarios.

The plan: Extract a team name from the left of a string followed by extracting the opponent team name.

The issue: Some teams have just 1 name others have 2 or three, names are separated by spaces and from their opponents by a space a vs. and a space. I cannot find a formula that suites the 3 different character counts. It's kind of like a IF(AND(OR scenario except with TRIM, SUBSTITUTE, LEFT, RIGHT.

In order to create a fixture list I need to separate the fixture list into two columns so I can extract individual teams and use the data elsewhere.

I have highlighted the problem in the attached worksheet.
