Is there a way to have text and a number in a cell, and use that cell in a formula, where it picks up the number for the calculation? For example.... cell entry with text would be like --> Est. $3,000.00

You can use the & operand.
For example:
="Est. "&sum(A1:A5)
Let me know if that works.
I don't think I explained it correctly.....
Example......
cell value 5000
cell value Est. 3000
sum of these 8000
Need the sum to add the two cells together, where one cell has text in it.

=SUM(A1,RIGHT(A2,LEN(A2)-FIND(" ",A2))+0)
