I want that if I change Status (C2) from "Not Started" to "In Progress":
a) Cell A3 should contain the date on which Status is changed to In Progress from Not Started.
b) Cell B3 should contain the date on which Status is changed to some other value from In Progress. (A3 remains unchanged)EG - Copy.xlsx

You cannot use formula for this one.. you have to go for VBA approach..
Do right click on the sheet tab and select view code and paste the below code. Return to excel and check.

My Requirement is:
1. Initially Status will have "Not Started" and thus, Start Date and End Date must be Blank.
2. If Status changes to "In Progress", Start Date should be the date on which I changed value from "Not Started" to "In Progress". And End Date should be Blank.
3. If Status changes from "In Progress" to "some other value". Start Date should be similar to above point and it must not be changed. However, End Date should be filled with the date on which I changed from "In Progress" to "some other value".
Can any1 help me with this ?
Did you checked the links that i provided?
The results that you have in your sample are corect and your problem is thst using TODAY() function the results changes every single day?
