Give an "X" the value of a 1. Show how many people are attending a meeting

End result: show how many people have attended the meeting in a quarter. (Ex: there are 250 in attendance, marked by an "X".)

a colored "X" indicates attending and paperwork processed
a colored "~" indicates not attending, paperwork processed

    a strikethrough "X" indicates dropped

How do I get the column to acknowledge that the colored "X" counts as 1 person?
How do I sum the colored "X" at the bottom of each column?

If I understand the problem correctly:

Eg. over ten rows if column A is where your data is, then in the corresponding row of column B enter this formula:

    =IF($A1="X",1,0)

Fill down then in cell B10 simply enter =SUM($B$1:B$10)

You can also sum the "~" in the same way.

I need to have the columns (eg. Z, AA, AB) over 218 rows, acknowledge the "X" as a 1 so I can sum at the end of those columns.

Yes! How do I get excel to see the "X" as a 1, so the existing doc isn't visibly altered?

Ah, okay. Well you can't change the X to a 1, but you can sum the total number of X's. In the file I attached, in cell B10, enter the following formula.

    =COUNTIF(B2:B9,"X")

This will sum the number of times that X occurs in the range.
