Auto Updating Data and Charts

I am attempting to set up something in Excel that will automatically update not only the charts that the data refers to but also the data itself. See, We take date that is collected and enter it into an excel sheet. We only care about the last 50 samples taken so every time we enter a new data point we need to go back and delete the oldest data point, shift the data up, enter the new data point, and then update the charts to make sure they match the data. I believe they call this "rolling data". As you can imagine this takes quite a bit of time and we would like to have this set up so that all we have to do is enter the data in one sheet, hit enter (or another button), and that data will then automatically be sent to the other sheet where it will join the rest of the old data while deleting the oldest data point, and update the charts. We have 12 charts that need updating at least 2 or more times a day and the process that we are using now is almost a full time job in itself. I have messed with the offset function a little bit and toyed with the idea of setting up some kind of macro but my lack of experience with Excel has lead me to this forum where I am almost certain there is someone who can help me with my seemingly simple problem. Please help.
