I typically screenshot something like that and just paste the photo into an excel file.
Microsoft OneNote is awesome for that (and you probably already have OneNote if you have Excel).

I'd like to know if there's a way to export selected excel cells to an email though.
Your request is too vague to offer any guidance.
Essentially I'd like to click a button that opens an outlook email with the selected cells in it.
I would suggest asking my good friend google.
