I would like to count the number of times a condition exists based on the date I have in row 1. Maybe I'm overthinking this.

You could do that with this formula
=SUMPRODUCT((C1:E1=J3)*(C2:E7="Late"))

Thanks for the quick response. I knew it wasn't that tough.
I think I missed some conditions, though. If you also want the other criteria use this version
=SUMPRODUCT((A2:A7=H3)*(B2:B7=I3)*(C1:E1=J3)*(C2:E7="Late"))
