How do I stop an apostrophe from disappearing?

I want a cell to read 'text' (with both apostrophes). It show up like this
in the equation bar, but not the cell (first spostrophe is missing).
Changing the "transistion navigation keys" box does nothing.
    Thanks in advance!

excel figures you mean that this cell should be treated as text when you type
    that initial apostrophe.

(that's why NWilcox suggested two apostrophes.)

I suppose the easiest answer is always in fact, the correct one. Thanks!
