Different options when opening workbooks in one or separate instances of Excel?

Can any one tell me where to get information on the following
If I open excel and then open a workbook and want to copy and paste to another workbook I can either,

    (1) - Open another workbook without opening the excel program again or,

    (2) - Open the excel program again and then open the other workbook so in this case I have 2 instances of excel running.

The copy and paste seems to work differently in these 2 situations for instance,
in (1) I get all the paste options such as values and formats.
in (2) I get a limited set of options.

    Where are these differences documented?

I don't know if that is documented anywhere but it's really what you see is what you get-once you've done it once you can see what the options are (copying between instances is the same as copying between different programs like from word to excel)
