Top row a label so it not included in sort

I have been to the help menu and all over theinternet and cannot get answer to what seems like a simple question. I can now do all kinds of advanced operations related to the top row, headers, freezing rows, inserting forms, etc etc but I still don't know how to make my entries in ROW 1 a label instead of data so that when I sort a column, the top remains a label and does not become a part of the sort. Help the blindly frustrated please. This is for 2007.

The sort dialog has a checkbox, "My data has headers", which you can set.

Thank you. I knew it had to be something pathetically easy. I was not going into the custom sort menu, just trying to use the sort largest to smallest selection.
