I routinely work with numbers larger than 1e310 and Excel has a built in limit, is there any way to force a number and exponent (such as 2 and 500 gives me 2e500) so I can use larger numbers?

Welcome to the board.
The limitation is not Excel, it's IEEE 754 double-precision floating point.
You could restructure your calculations to work in log space, or investigate extended-precision arithmetic packages (e.g., http://precisioncalc.com/xlprecision.html)
