Map colours from one row in Gantt for project into top level (overview) row

I've recently taken on managing a large group of Project Managers and have downloaded a project schedule template that I have updated to what I require. However, I'd like to be able to have an easy overview of the different stages of each project each project manager has to look at their schedule from a resourcing point of view.
The spreadsheet currently populates the Gantt based off the dates populated for each stage of the project. However, I was wondering if it could be updated with the following:
    1) Make each stage of the project populate the Gantt chart with a different colour.
    2) Populate the top 'Project' row of the Gantt for each project with the dates/colours of each stage of the project, so when the different stages are collapsed it's still identifiable as to which stage each project is at?

I've attached the spreadsheet I'm using which has a tab 'mock-up' of what it is I'd like the workbook to look like.

(On a side note: does anyone know how to remove the Saturday/Sunday columns so it's weekdays only? And also, does anyone know how to update the week view to DD/MM/YYYY, rather than MM/DD/YYYY)?

Thanks in advance, I've looked through hundreds of guidance notes and forum chats but haven't been able to find any help on the specific thing I require.

Not sure about the Gantt bit. But looking at the date issue, it looks like you've got a custom format in there.

Either select the cells then change the format to Short Date; or
Select the cells, custom format the cells and enter dd/mm/yyyy.

    Hope that helps :-)
