Sure its just an option somewhere, but I can't find it

I've had this; my guess is you're using a Display Adapter right!?
It's a bug in the display adapter side of things - not Excel; nor any other app it occurs in. To fix:
1 - Right click on the minimized app and choose restore; chances are you're not that lucky; move to step 2:
2 - Right-click on the desktop and set to a different screen resolution; this is a tedious process. Start at the top and work your way down so you can be sure you're not missing your saviour resolution. After changing the resolution right-click on the little bar you have and choose restore. If you're unable to see restore/ commands then repeat 2.
I've had to loop through stage 2 approx 3 times before (through every resolution 3 times I mean; not just 3 resolution loops lol). This should help fix it.
Thanks, it is solved now, a little other workaround then you suggested..
Right click on the minimized excel file, "Change format'', and then make the app bigger
