So I have real time data coming into excel from a PLC (RSLinx), is there a way to also archive this data in excel even though its constantly updating in the cell?

well of course, I think. VBA has a timer function in it, I think. but it depends on how fast the refresh rate is set to from your Linux source. it also depends on "how" you want to archive this data. you mean store it for historical purposes? you can do that by creating one new sheet everytime the data is updated. but that would create a very large book in no time. I would bet that a real-time connection from any source would not affect VBA code from running in the book at any given time, because your source can't detect that and cause a red flag.
