In my experience results of converting pdf files to Excel are poor to average at best unless it's just the most basic of tables on a very clear pdf.
It's not something I do that often due to this but have always had to perform some editing on the results to get to what I need (or get someone else to at least).

hi Dom,
Thank you for your response. I'll continue to search for ...maybe I find something, for the moment I have nothing!
This is a backup solution, we use a software to save as xls and then I ahve a code to import data, but sometimes that software does not
work at all due to unknown reasons. the data is sent by email in pdf format, all I want is to convert it to excel.
Thank you!

The most comprehensive professional software solution on the market that can convert pdf files to Excel is Cogniview's PDF2XL - they have an amazing support team that can create templates for you to use with your free trial if you don't manage to create one yourself.
Specifically if you also need some automation like from the email you suggested they have a product called PDF2XL CLI - Command Line Edition that you can use to automate pdf to excel conversion if you have a ready template in case all those files are the same format.
