I have a JPEG in my document which I want to act as a button to call a macro to print multiple serial numbered copies. I have written the macro PrintCopies, how do I assign my JPEG to trigger this function?
Right click > Assign Macro ...

I don't see that option. I only see Hyperlink with doesn't allow me to assign macros.

Excel I can usually manage. Word I struggle with.
In Word 2003 & earlier, you could do this by inserting the picture into a MACROBUTTON field; in Word 2007 & later, you can do by inserting the picture into a Picture Content Control and using its on-entry event.
