Hi,
I am looking to pull data from a Data model Pivot table as per attached screenshot. using the below formula
=GETPIVOTDATA("Order n°",$A$3,"Month",G$5,"Rec. Plant",$F6)
I understand that the formula does not work the same as with a normal Pivot table, so any help would be greatly appreciated.

Use CUBE functions instead.
If you select any range belonging to pivot table. You can go to Ribbon tool -> Pivot Tools -> OLAP Tools.
You can convert the pivot table to CUBE function(s) and it does not require Pivot Table to be present.

When I convert to Cube functions as above, will the data then not update if I change the raw data?

It will update with raw data when data connections are refreshed.
CUBE function retrieve value directly from Data Model.
EDIT: Oh, keep in mind, you'll need to extend formula range before hand (using IFERROR() to show blank when data isn't present).
