how to create selectable multiple linked drop down lists that omit used items for menu

Hello I hope i have posted in the correct section!! I have a complicated issue with a function menu i am trying to create for a offsite catering work! I have multiple canape menu's and set menu options in certain price points.

The form needs to be idiot proof so that when i select a option box that is the only options that can be selected from. Also to complicate matter furthers when i have selected the menu options via the option box i require further data validation to omit selected items so that they are not entered twice.

I have created a sample form with data required and fields where data validation is required however im not sure how to go about the rest or even if i have started correctly there is so many menu types and combinations that im unsure how to go about the validation.

Also please disregard the sample form to the far right as this is a reminder as how i have to format the general appearance for later on!
