Try:-
Click File on menu
Select Options
The first window allows a choice of Colourful, Grey, Black or white.
This applies for 2016, I am not sure whether the same ability was available in 2010.

No option found on 2010
My 2016 just had color, Dk Grey or Wht, but 2010 should have the same options

One way to do this is to save a new version of Book1.xlsx to the XLStart folder after creating a new default theme
1 Open a New File
2 Click on Page Layout Tab
3 Click on Colors
4 Click on Customise Colors
5 Change the first 4 lines (all text)
6 Amend the name at the bottom
7 And click on save
This is now the theme of the current book
Now you must save the workbook (the name must be Book1) to the your XlStart folder
(search for it if you do not know where it is!)
Close the file and close Excel
When you next open a new file it will have the style of your new Book1
