How do I COUNTIF with a table that has data hidden?

OK, I don't know the terminology, it is early, so please correct me.

I have a table, one column has scores another has dates. I have a COUNTIF that counts how many times -25;-15;-10 appears. I would like to be able to filter those dates to specific days only. This spreadsheet is updated daily but I want to be able to show managers just the previous days report quickly. Make sense?

Essentially, how do I get COUNTIF to only apply to the visible rows?
