I have used code to save the worksheet to add the date and time on save function. I am now trying to delete the previous versions automatically when either saving or exiting the latest worksheet. Can you assist please?

Not sure I understand. Are you talking about worksheets or workbooks? Are you making a copy of the worksheet within the workbook, or making a copy of the workbook using SaveAs?
Either way, automatically deleting previous versions is a risky strategy. If you screw up processing the current version, and you automatically delete previous versions, then you have nothing to fall back on.
No worse than working all day then closing Excel, maybe while looking at another workbook and not saving changes ... but, at least, this is in your control.
My advice: don't.
