three variables pivot tables

hi, i have a material call off sheet (see attached) and want to pivot table the data into three separate columns

plot, material, date

I'm unsure how to pivot this

my suggestion - a solution by the addition of Power Query. Add more content and date and refresh the table PQ

only problem, i use a mac, and i don't think i can get power query
