I need a formula where, for example, if A1 is greater than 2, then B1, B2 and B3 are all greyed out or blocked from allowing text.

Make conditional formatting: Select cells B1 to B3, type Alt, O, D = Conditional Formatting, New Rule, Formula, and type into the formula field = $A$1>2, select format and change to e.g. gray fill color
If you want to make it block from allowing text: Select cells B1 to B3, type Alt, D, L = Data Validation, Allow, Custom, Formula type =""
