I want the default cell format to be the general category so that cells automatically recognise dates etc but I want the default number format within the general category to be #,##0;(#,##0);-. Does anyone know how to change this?

As far as I know, what you want is "hard coded" into Excel. You can however create a template with the formatting that you want.
